Thai Style Chicken Patties

Ingredients

500g Free Range Chicken Thighs - minced

2 Tbsp Sweet Chilli Sauce

1/4 Cup Fresh Coriander, chopped

2 Cloves Garlic, crushed

1 Tbsp Lemon Zest

Peanut Oil for cooking

Dipping Sauce

1/3 Cup Sour Cream

1 Tbsp Sweet Chilli Sauce

2 tsp Fresh Coriander, chopped

2 tsp Fresh Mint, chopped

Method

Mince the chicken thighs in a food processor and place in a large mixing bowl.

Add the sweet chilli, coriander, garlic and lemon rind and mix well.

Take about a tablespoon of the mixture and roll into a patty and fry in the peanut oil on a medium heat.

Meanwhile whisk together the dipping sauce ingredients and serve with the warm patties.
