Spanish Chicken with Almonds, Dates & Fresh Coriander

This was a winner with the mystery ingredient, Dates.

Ingredients

150g Dried Dates

1 Cup Orange Juice

1 Cup Plain Flour

1 Tbsp Ground Coriander

4 Free Range Skinless Chicken Breast, cut into quarters

3 Cloves Garlic, finely sliced

30g Butter, plus a little extra

100 g Almonds

1 Red Onion, thinly sliced

1/2 Cup Red Wine

Sea Salt

Freshly Cracked Black Pepper

Balsamic Vinegar (optional)

Fresh Coriander Leaves to Garnish

Buttered, hot Cous Cous to serve.

Method

Preheat oven to 200c.  Place the dates and 1/2 cup Orange Juice in a ceramic bowl and microwave on high for 1 minute.  Reserve to the side.

Combine the flour and dried coriander and dust the chicken pieces to coat well.

Gently fry the garlic in the butter, together with the almonds and onion until golden and softened.  Reserve to the side.

Add a little more butter and then gently fry the dusted chicken pieces.  Once light brown, pour over the red wine, remaining 1/2 cup of orange juice and then add the reserved date and almond mixtures.

Season with salt and pepper and bake in the oven for 5-8 minutes.

Drizzle with balsamic vinegar (optional) and serve with fresh coriander and buttered cous cous to the side.
