Polpettini Meatballs

Ingredients

2 cups Fresh Breadcrumbs

1 Cup Milk

500g Chicken Mince

500g  Pork Mince

1 Cup Parmesan Cheese, grated

2 Cloves Garlic, crushed

1 Cup Flat Leaf Parsley, chopped

1 Egg

1 Cup Almonds, roasted & crushed with rolling pin

1 Lemon - zested

Sea Salt & Freshly Cracked Black Pepper

Sauce

500ml Tomato Sugo

2 Cloves Garlic

2 tsp Sugar

1/2 Cup Fresh Basil Leaves, chopped

Method

For the meatballs, place all ingredients in a large bowl and mix well until combined. Make meatballs about the size of a golf ball and roll in seasoned flour.  Place on a lined baking tray and bake for 20-30 minutes, or until just done.

Meanwhile for the sauce, gently fry off the garlic, add the tomato sugo and sugar.  Simmer for 5 minutes.  Add the basil just before serving.

Serve with pasta.  Or alternatively, serve as a nibble with home made relish.
