Ingredients
1 1/2 Cups Frozen Green Peas
1 Bunch Asparagus, cut into 2cm lengths
300g Green Beans, halved
2 Sirloin Beef Steaks
2 x 300g Cans Butter Beans, rinsed & drained
Chives to Garnish
Dressing
1 Cup Natural Yoghurt
2 Cloves Garlic, crushed
2 Tbsp Lemon Juice
1 Tbsp Wholegrain Mustard
Sea Salt & Cracked Black Pepper
Method
Steam peas, asparagus and beans until just tender and refresh under cold water and drain well.
Combine all of the dressing ingredients in a screw top jar and shake well.
Meanwhile season steaks and cook in an oiled pan until medium rare, cover and stand for 5 minutes. Slice steaks thinly.
Combine peas, asparagus, green beans, steak slices, butter beans and dressing in a large bowl and gently combine.
Serve garnished with freshly snipped chives.
